How To Brew
When we developed our first espresso we were determined to highlight the things we loved about the flavor and consistency of espresso - bitterness, acidity, and sweetness.
When brewed correctly, there should be a perfect balance between all three of those flavors. So to get it right, heres how to brew:
Espresso
- 20g espresso
- 27-30 second brew time
- 50g espresso out
The flavor should be well balanced with 'blooming brightness', as one of our colleagues likes to say, and a slightly bitter finish. Texturally, we are aiming for a silky, velvety espresso shot. If you have all these components down, you've brewed a great shot.
We recommend this espresso to be enjoyed on its own. When paired with milk, the espresso gets lost and the flavor notes taste duller.

- 22.5g espresso
- 360g water
- 3 min brew time
When brewed with the Kalita Wave, the espresso morphs into something entirely new. It becomes a bit more delicate, with a crisp black tea and sweet honey taste.
